How to make layered tortilla kebab skewers

Begin with preparing the meat mixture. Chop the onion, red pepper, and garlic finely. Combine all the meat ingredients and mix thoroughly until the mixture becomes sticky and uniform.

Next, prepare the tortillas for layering. Cut each tortilla into squares, trimming off the curved edges. Divide the meat mixture in half, one portion for the first set of 6 tortillas, and the second portion for the remaining 6.

Then, layer the tortillas. Place a tortilla square on your work surface and spread a thin, even layer of meat mixture over it. Continue stacking, tortilla, then meat, until you have 6 layers, finishing with a layer of meat on top. Repeat the same process for the second set of tortillas. Press gently to compact each stack.

After that, cut the layered stacks into rectangles. Slice each stack into 5 even rectangles. Rotate the pieces so the bottom tortilla layer presses gently against the top meat layer of the neighboring piece, helping the blocks hold together. Insert skewers carefully through each rectangle to secure the layers. Cut the skewers.

Prepare the basting sauce. In a small skillet or cast-iron pan, combine butter, lemon zest, minced garlic, chili flakes, salt, and green chili if using. Place over low heat and allow the butter to melt slowly, letting the flavors infuse. Stir in honey and mix until fully incorporated.

How to grill the skewers

Preheat your grill to medium heat. Place the skewers on the grill and brush generously with the honey, lemon butter sauce while cooking. Turn often until the tortillas are golden brown and the meat is cooked through, about 10–12 minutes.

Finally, serve. Serve the skewers hot straight from the grill. The tortillas will be slightly crisp on the outside, the meat juicy inside, and the honey–lemon glaze will give a shiny, flavorful finish.

These Homemade Roasted Red Peppers are a versatile and vibrant ingredient, loved for their sweet, smoky flavor and rich, velvety texture. Roasting peppers brings out their natural sweetness, creating a depth of flavor that enhances everything from sauces to salads.  Their bold red color and smooth texture make them a beautiful addition to antipasto platters, sandwiches, pasta, and soups.

When roasted in the oven, the peppers are heated until their skins blister and blacken, allowing their natural sugars to caramelize and intensify the flavor.

Once roasted, the skins are peeled away, revealing a tender, juicy flesh. They pair wonderfully with flavors like garlic, basil, and olive oil, bringing out the best in Mediterranean-inspired recipes. In dips, like hummus or Tirokafteri, they add creaminess and depth, balancing spices and herbs.

These Roasted Red Peppers bring both a pop of color and a burst of flavor to meals. Packed with vitamins, especially C and A, they’re a nutritious, low-calorie choice. Whether blended into creamy sauces or used as a garnish, roasted red peppers add warmth and elegance to any dish.

How to make homemade roasted red peppers

Start by preheating your oven to 375 F (190C). Line a baking sheet with parchment paper. This keeps the peppers from sticking and makes cleanup easier.

Next, cut your red peppers in half lengthwise and remove the seeds and white veins. Be sure to rinse them well and pat them dry; this helps them roast instead of steam, giving them that ideal charred skin. 

Next, place the pepper halves cut side down on your prepared baking sheet.

Now, it’s time to roast! Place them in the oven and roast for about 25 minutes, or until the skins are nicely blistered and charred. If your oven has a convection setting, use it to get an even roast.

Once they’re done, carefully remove the baking sheet from the oven and cover the peppers with a kitchen towel. This allows them to steam, which makes peeling the skins much easier. Let them cool for about 20 minutes.

After they’ve cooled slightly, peel off and discard the skins.

Store your roasted peppers in an airtight container in the refrigerator until you’re ready to use them. For extra flavor, season with salt, freshly ground black pepper, and a drizzle of olive oil.

This Sheet Pan BBQ Chicken and Roasted Veggies is a great idea for an easy one-pan quick dinner. This flavorful chicken is coated in honey, chili, and BBQ sauce and baked until tender alongside some perfectly roasted mixed potatoes and broccoli.

This sweet chili glaze is amazing. I love to use it over chicken as in this BBQ Chicken Wings recipe.

For this sheet pan, I use both regular and sweet potatoes.  They are bursting with flavor due to the  Parmesan cheese, breadcrumbs, garlic, and herbs coating. The breadcrumbs make the potatoes crispier and I usually like to add a bit of breadcrumb to my potato recipes.

I have used broccoli this time for my BBQ Chicken Sheet Pan but feel free to use any other veggies that suit your tastes better. Brussels Sprouts, cauliflower, green beans, or asparagus are great choices for sheet pans.

This meal is quick and effortless to prepare, making it a great weeknight dinner option. Serve with a side of rice or crusty bread for a complete and satisfying meal.

For the chicken

BBQ Honey Sauce

  • 1/4 cup (60g) barbecue sauce
  • 2 tbsp (45g) honey
  • 1 tbsp (15g) hot chili sauce (sriracha)

For the Potatoes

  • 1 pound (450g) sweet potatoes
  • 1 pound (450g) potatoes
  • 2 tbsp olive oil
  • 1/2 tsp (1g) garlic powder
  • 1 ½ tbsp (12g) breadcrumbs
  • 1/4 cup (25g) Parmesan Cheese
  • salt
  • freshly ground black pepper
  • mixed dried herbs , oregano, basil, thyme

For the Broccoli

Instructions

  • Preheat the oven to 400F (200C). Line a large baking sheet with parchment paper and set aside.
  • Place the barbecue sauce with honey and hot chili sauce into a small saucepan. Simmer over low heat for 1-2 minutes. Remove from heat and set aside.
  • Cut potatoes into about 1 inch (2.5 cm) chunks. Add potatoes and sweet potatoes to a large bowl. Add olive oil, salt, pepper, herbs, garlic powder, breadcrumbs and Parmesan cheese over the potatoes. Toss to coat.
  • Arrange the tossed potatoes on the baking sheet on one side.
  • Cut broccoli into florets and place into a large bowl. Drizzle with a bit of olive oil, season with salt and pepper and toss to coat.
  • Place the chicken and broccoli on the baking sheet. Season chicken breast with salt, pepper and smoked paprika if used.
  • Brush the chicken with honey BBQ sauce.
  • Bake for 25-30 minutes until veggies are tender and chicken is cooked through.
  • If broccoli cooks too fast, cover it with aluminum foil after the first 15 minutes.
  • Broil for a few minutes before removing the baking sheet from the oven.
  • Once it has finished baking remove the pan from the oven and add a bit more honey BBQ sauce to the chicken if desired.

This is by far one of the best way of preparing chicken wings. The spicy sweet sticky sauce is simply amazing and hard to resist. You can always adjust the seasoning, use more or less spiciness depending if you serve this for kids or not. You can serve them as an appetizer alongside a ranch dipping sauce or as a main dish alongside some good fresh salad, potato salad or coleslaw. Enjoy!

Salmon is one of the most delicious and healthy fish you can prepare for your family or friends as is full of vitamins, minerals, and omega-3 fatty acids. I usually like to use wild caught salmon whenever that is possible as it contains more minerals and less fat. This Baked Sesame Salmon is one of my favorite recipes I make pretty often for my family.

Baked Sesame Salmon on Baking Sheet

This Baked Sesame Salmon recipe is very easy and quick to prepare. The salmon pieces are marinated in a soy sauce, honey, ginger, sesame oil, and garlic mixture which gives salmon a great flavor and a great balance between sweet and spicy. There’s no way not to fall in love with this recipe from the first bite.

You can serve this Baked Sesame Salmon with your favorite roasted veggies and alongside rice.

How to make baked sesame salmon

Begin by combining ginger, garlic, soy sauce, sweet chili sauce, rice vinegar, honey, and sesame oil in a small bowl to create a flavorful marinade.

Next, cut the salmon into four pieces and season each piece with salt and freshly ground black pepper.

Transfer the seasoned salmon pieces to a bowl and pour the soy sauce marinade over them. Cover the bowl and allow the salmon to marinate for at least 30 minutes, or overnight for enhanced flavor.

Preheat the oven to 400°F (200°C) and line a baking pan with parchment paper.

Arrange the marinated salmon pieces on the prepared baking pan and bake them for 15-20 minutes.

During baking, periodically brush the top of the salmon pieces with the marinade for added flavor infusion.

Once the salmon is cooked to perfection, sprinkle sesame seeds and chopped green onion over the top for a delightful garnish.

Baked Sesame Salmon

This Baked Sesame Salmon recipe is very easy and quick to prepare. The salmon pieces are marinated in a soy sauce, honey, ginger, sesame oil and garlic mixture which gives salmon a great flavor and a great balance between sweet and spicy. There’s no way not to fall in love with this recipe from the first bite.

Ingredients

  • 1 pound (500g) salmon
  • 1 inch (2cm) piece of ginger , grated
  • 2 garlic cloves , minced
  • 1 tbsp (15g) sweet chili sauce
  • 1 tbsp (15ml) rice vinegar
  • 1 ½ tbsp (30g) honey
  • 3 tbsp (45 ml) soy sauce
  • 1 tbsp (15g) sesame oil
  • Sesame seeds for serving
  • Green onion , chopped

Instructions

  • In  a small bowl combine ginger with garlic, soy sauce, sweet chili sauce, rice vinegar, honey and sesame oil.
  • Cut the salmon in 4 pieces and season with salt and freshly ground black pepper.
  • Place the salmon pieces in a bowl, pour the soy sauce marinade over it, cover and marinate for at least 30 minutes to overnight.
  • Preheat the oven to 400F (200C). Line a baking pan with parchment paper.
  • Place the salmon pieces into the prepared pan and bake for 15-20 minutes. From 5 to 5 minutes brush the top with the marinade used.
  • Sprinkle sesame seeds and chopped green onion on top  and serve immediately over rice  and vegetables. Enjoy!

We have collaborated with Stubb’s Legendary BBQ  to prepare an easy and delicious Bacon Wrapped Chicken recipe you can prepare either in the oven or on an outdoor grill. The chicken is marinated in Stubb’s Chicken Marinade,  a blend of citrus, onion, and garlic that packs a fresh flavor with undertones of mustard seed and ginger while the acid from the citrus will make a moist and tender meat. Then the meat is brushed with Stubb’s Spicy BBQ Sauce, wrapped in bacon, and baked or grilled until chicken is cooked through.

I love using Stubb’s Bar-B-Q sauces, marinades, and rubs because they are made with quality, gluten-free ingredients, and never uses artificial preservatives, colors, or flavors.

The chicken prepared this way is incredibly tasty, looks really appetizing, and very easy to prepare. There are only a few ingredients involved and for sure will be the star of the meal.

How to make Bacon Wrapped Chicken

Begin with cutting each chicken breast in half lengthwise.

Season the chicken with Stubbs Chicken Marinade, a flavorful blend of citrus, onion, and garlic. This marinade not only adds a fresh taste but also tenderizes the meat with its citrus acidity. Refrigerate the seasoned chicken for at least 1 hour.

Preheat the oven to 350 F (180C).

Next, brush all sides of the chicken with Stubbs Spicy BBQ Sauce. This sauce features tangy tomato, vinegar, molasses, and a blend of peppers including habanero, cayenne, and black pepper, adding a spicy kick to the dish.

Wrap a piece of bacon around each piece of chicken to infuse it with smoky flavor.

Place the chicken on a greased grill and bake for 15 minutes.

After 15 minutes, baste the chicken with more BBQ sauce. Return it to the oven for an additional 10 minutes.

For extra flavor, baste the chicken once more and return it to the oven for a final 5 minutes.

Serve the deliciously tender chicken with a side of fresh salad and extra BBQ sauce for dipping.

Thanksgiving is rapidly approaching and everybody is searching for the best ideas for this special dinner. For all those who consider a whole turkey might be too much this roasted turkey breast might be a wonderful solution. It is really easy to prepare, takes no more than 10 minutes to make the marinade, and once roasted you will have a wonderful looking roasted turkey, moist and flavorful.

Love this marinade, as it allows the roasting of the turkey breast without the skin, and it still remains moist and delicious. Not to mention that is healthier this way as well. The use of mustard is definitely a winner for me and will use it in many marinades for either chicken or turkey.

This roasted turkey breast is suitable not only for holiday tables but for any other day as it is quick, and can be used in various recipes for the next days either for sandwiches, or use it for enchiladas, salads and the list can go on.

Marinade

  • 1 tbsp (10g) flour
  • 1 cup (240ml) vegetable stock

Instructions

  • Preheat the oven to 350F (180C). Rinse the turkey well and pat it dry.
  • Place all the marinade ingredients, mustard, vinegar, herbs, salt and pepper, garlic, smoked paprika and olive oil,  into a bowl and stir to combine.

  • Rub the mixture all over the turkey. Refrigerate to marinate overnight, if possible, or leave at least 1 hr before roasting.

  • Place the turkey breast into a baking pan, or baking sheet.

  • Roast for 45 minutes to one hour, until the thermometer reaches 170F (77C).
  • Let it stand for a couple of minutes and slice to serve.
  • Prepare the gravy if desired. After removing the turkey to a serving platter, place the pan to the stove on medium heat. Add the flour. Stir to combine. Add the stock, stir and let it cook until thickened and smooth.

Fish is one of my family’s favorite type of meat, we cook with fish more than twice a week. It’s light, healthy, and full of vitamins and minerals, and omega-3 fatty acids. My daughters enjoy fish meals, especially like this Oven Grilled Fish, served with sour cream and garlic sauce or with my homemade lemon sauce.

We usually like fresh water fish, like trout, zander or bass, but we cook salmon and other types of fish as well. Whenever grilling outside is not possible, this method is one of the easiest ways to grill fish indoors. This Oven Grilled Fish is healthy, quick, and delicious, making a great meal.

I like to make some scores into the surface of the fish so all the good flavors combine. You can do that for either a whole fish or a fish fillet.

These days we bought a wild captured zander, one of our favorites, as the meat is very firm, and white, the flavor is very delicate and the bones are easy to remove. If zander is not available in your area use this method presented here for any other type of firm fish. It will work as well.

How to make Oven Grilled Fish

Start by scoring the fish’s surface with a sharp knife in 3 or 4 places. Sprinkle salt, pepper, lemongrass, and any desired herbs on all sides of the fish, including the inside. Place the seasoned fish in a bowl, cover it with foil, and refrigerate overnight.

Preheat your oven to 450F (230C) using the grill function. Line a baking tray with parchment paper or aluminum foil and place a rack on top to allow grease to drip. Put the fish on the rack and drizzle a little butter or vegetable oil over it. Put the tray in the preheated oven.

Allow the fish to cook for approximately 20-30 minutes, or until the skin becomes crispy and lightly golden. Keep a close watch to avoid burning.

Meanwhile, prepare the sour cream mixture by combining sour cream with minced garlic and salt.

Once the fish is cooked, remove it from the oven. Serve it with the sour cream mixture, lemon sauce, or lemon slices alongside your favorite side dish.
