Then, add the vegetables and spices. Stir in the red bell pepper and tomato paste, cooking for 2–3 minutes to deepen the flavors. Add chili powder, cumin, smoked paprika, cayenne, salt, and pepper, stirring to coat everything evenly.

How to make patatas bravas

Begin with cooking the potatoes. Heat 3 tablespoons of olive oil in a large pan over medium heat. Add the diced or cubed potatoes, season with salt, and cook gently, stirring occasionally, for a few minutes until the potatoes start to turn lightly golden.

Add a splash of water, cover the pan with a lid, and simmer until the water evaporates. Once dry, remove the lid and continue cooking, stirring frequently, until the potatoes are tender on the inside and golden crisp on the outside. Transfer the potatoes to a bowl and keep warm.

Next, make the bravas sauce. In the same pan, add 1 tablespoon of olive oil. Sauté the finely chopped onion over medium heat for about 5 minutes, until soft and translucent. Add minced garlic and cook for another minute, just until fragrant.

Stir in both sweet and hot paprika, allowing the spices to toast briefly to release their aroma. Then, sprinkle flour over the onion and garlic mixture and stir constantly to form a light roux, cooking for 1–2 minutes.

Sear the chicken for 6–8 minutes on each side, depending on thickness, until golden brown and cooked through to 165°F (75°C). Remove the chicken from the skillet and set it aside.

Next, sauté the garlic and cherry tomatoes. Reduce the heat to medium. In the same skillet, add the minced garlic and sauté for about 30 seconds, just until fragrant. Add the cherry tomatoes and cook for 3–4 minutes, until they soften and begin to blister.

Pour in the chicken broth and stir to deglaze the pan, scraping up any browned bits. Let it simmer for 1–2 minutes. Stir in the cooking cream and Parmesan cheese, and simmer gently for another 2–3 minutes, until the sauce begins to thicken slightly.

Cooking methods vary depending on preference. This one here is a medium-rare steak, pan-seared, cooked just enough to develop a beautifully seared crust while keeping the inside warm and deep red. It offers a melt-in-your-mouth texture and rich, beefy taste.

The best cuts for a medium-rare steak include ribeye and sirloin, known for their marbling and tenderness. Cooking a medium-rare steak requires high heat and a quick sear. Typically it needs around 2-3 minutes per side, allowing the outside to develop a caramelized crust while preserving the natural juices inside. Simple seasonings like salt, pepper, and a touch of butter enhance its bold flavor without overpowering the meat.

The beef steak pairs perfectly with classic sides like roasted potatoes, sautéed mushrooms, roasted brussels sprouts or a green salad. For an extra layer of indulgence, serve it with a drizzle of chimichurri, pesto, parmesan cheese or garlic butter. 

How to make beef steak

Ingredients

  • 2  ribeye or sirloin steaks ,about 1-inch (2cm-2.5cm) thick, 1/2 pound (250g) each
  • Freshly ground salt
  • 2 tbsp (30ml) oil
  • 4-6 garlic cloves
  • 2 sprigs fresh thyme 
  • 1 sprig fresh rosemary
  • 1 tbsp (15g) unsalted butter

For topping the steak after cooking

Instructions

  • Place the steak on a cutting board or plate.
  • Generously season the steak with salt on both sides.

  • Cover it with a paper towel and let it rest in the refrigerator for several hours or overnight. This process helps to extract moisture from the surface layer of the meat, creating a better crust during cooking while preserving the flavor inside.

  • Let it get to room temperature, about 1 hour before cooking.
  • Meanwhile, prepare the rest of ingredients.

  • Heat a heavy-bottomed skillet or cast-iron pan over medium-high heat.

  • Once hot, add a small amount of oil to prevent sticking and promote a beautiful sear.
  • Place the steak in the hot pan and sear it undisturbed for about 3-4 minutes.

  • Flip and sear for another 3-4 minutes on the other side, or until a golden-brown crust forms.

  • Use tongs to hold the steak on its edges for about 30 seconds to render the fat.

  • This way, you will achieve an even sear all around.
  • Reduce the heat to medium-low and add crushed garlic cloves, fresh thyme, and rosemary to the pan.

  • Add butter and let it melt.

  • Tilt the pan slightly.

  • Baste the steak with the melted, aromatic butter for an extra flavor.

This lentil stir-fry is one of those meals that comes together effortlessly but tastes like you put in way more effort. It’s packed with flavor, and full of texture, it is a high-protein side dish and seriously satisfying.

It all starts with cooking the lentils until tender, though canned lentils work just as well if you’re short on time. The vegetables like onions, garlic, ginger, red bell peppers and sweet carrots are stir-fried together over medium-high heat, filling the kitchen with an irresistible aroma. Feel free to toss in other vegetables like broccoli or shredded cabbage for extra flavor and texture.

The real magic happens when the lentils join the mix, soaking up all the rich umami goodness from soy sauce and oyster sauce. A final drizzle of sesame oil brings everything together, giving the dish its signature nutty, savory-sweet finish.

It’s hearty enough to stand on its own but also pairs beautifully with meat or fish. Simple, flavorful, and packed with nutrients, this stir-fry is proof that lentils can be anything but boring.

How to make lentil stir-fry

Begin by rinsing the green lentils under cold running water, then cook them in a pot of boiling salted water until they are tender but not mushy, about 15-20 minutes. Drain well and set aside.

Next, heat oil in a large skillet or wok over medium-high heat. Swirl the oil around to coat the pan evenly.

Add the vegetables, the bell peppers, carrots, onion, garlic and ginger and stir-fry for several minutes, stirring continuously to ensure they cook evenly while retaining their vibrant color and slight crunch.

Incorporate the cooked lentils into the pan, gently tossing them with the vegetables. Pour in the soy sauce, oyster sauce, and sesame oil, stirring well to evenly coat everything in the flavorful sauce.

Cook for another minute, allowing the flavors to meld together. Taste and adjust seasoning if needed.

Serve immediately, garnishing with chopped green onions for extra flavor and texture. Enjoy as a nutritious main dish or a hearty side!

  • 3/4 cup dry green lentils , 1 1/2 cups cooked green lentils or 1 can of (15oz) lentils
  • 2 tbsp vegetable oil
  • 2 medium carrots , cut into thin strips

  • 1 ½ inch (4cm) fresh ginger , finely grated
  • 1 large onion

Instructions

Simply season your chicken breasts with your favorite spices, add a splash of stock or your preferred sauce for extra moisture, a drizzle of olive oil or butter and let the crockpot do the rest. In just a few hours, you’ll have perfectly cooked chicken, ready to elevate any meal. 

The best part is that while the chicken slowly cooks, you’re free to work, deal your to-do list, step out of the house or simply relax as there’s no need to watch over the stove.

How to make crockpot chicken

Begin by cutting the chicken breasts in half lengthwise for more even cooking and to better absorb seasoning.

Next, generously season both sides of the chicken with sea salt, freshly ground black pepper, garlic powder, paprika, and dried oregano. For even coating, rub the seasoning into the chicken with your hands.

Place the seasoned chicken breasts into your crockpot. Drizzle olive oil over the chicken to enhance the flavor and keep it moist during cooking.

Pour vegetable or chicken stock over the chicken, ensuring it’s partially submerged. This helps infuse flavor and prevents drying out.

Cover the crockpot with its lid and set it to cook on HIGH for 3 ½ hours. Avoid opening the lid during cooking, as this can release heat and increase cooking time.

Once done, decide how you’d like to serve the chicken. You can keep the breasts whole for serving alongside sides, or shred the chicken using two forks. If shredding, pour the flavorful stock over the chicken to keep it juicy and enhance its taste.

How to make this easy potato corn chowder

To start, cook diced bacon in a large soup pot over medium-high heat until it’s browned and crispy. Once the bacon is crispy, transfer it to a bowl and set it aside. Leave the rendered fat in the pot for added flavor.

Next, add diced onion and celery to the pot, cooking until softened, which should take about five minutes. This builds a savory base for your chowder. Stir in minced garlic and cook for another minute until fragrant.

Now it’s time to add your broth—vegetable or chicken—along with diced potatoes, corn kernels, dried thyme, salt and pepper. If you’re using fresh corn, don’t forget to toss in the cobs for that extra burst of flavor! Cover the pot, bring it to a boil, and then reduce the heat to a gentle simmer. Let it cook for about 15 minutes until the potatoes are tender, checking occasionally to stir. If you want a creamier chowder, you can mash some of the potatoes against the side of the pot as they cook!

  • In a large soup pot, cook the diced bacon over medium-high heat until browned and crispy.

To start, cut your chicken breast into even ¾ inch or 2 cm strips, ensuring uniform size so they cook evenly. 

Next, season the chicken generously with salt and pepper on both sides and sprinkle with dried thyme or rosemary.

Heat some olive oil in a large skillet over medium-high heat, ensuring the pan is hot before adding the chicken. Place the seasoned chicken strips in the skillet, making sure not to overcrowd the pan, so the chicken sears properly. Cook the chicken for 4 to 6 minutes on each side, allowing it to develop a golden brown crust while locking in the juices. You’ll know the chicken is ready to flip when it easily releases from the pan. Once done, transfer the chicken to a plate.

How to prepare the apples and the sauce

In the same skillet, add your apple slices, making sure they’re spread out in an even layer to ensure proper caramelization. Cook the apples for about 3 to 5 minutes on each side, turning them carefully once they soften and begin to brown.

I’ve used Gala apples for their natural sweetness and firm texture, but Honeycrisp apples or Granny Smith apples will be as good. Feel free to choose the variety that best suits your taste.

Next, stir in finely minced garlic and pour in your chicken or vegetable stock to deglaze the pan, scraping up any flavorful bits that have stuck to the bottom. Add honey, butter and apple cider vinegar. Let the mixture come to a gentle simmer, allowing all the flavors to meld together. As it cooks, the sauce will reduce slightly, filling the kitchen with a delightful sweet and savory aroma.

Once the sauce is ready, return the chicken to the skillet, making sure each piece is tossed and coated in the flavorful mixture. Allow the chicken to warm through and absorb some of the sauce, creating a perfect balance of savory, sweet, and tangy flavors.

For a final touch, garnish with fresh rosemary or thyme. Serve your chicken apple skillet alongside creamy mashed potatoes, fluffy rice, or crusty bread to soak up every last bit of that delicious sauce.

  • 1 ¼ pound (600g) boneless skinless chicken breasts
  • salt and freshly ground black pepper
  • dried thyme ,or rosemary
  • 2 tbsp olive oil
  • 2 medium apples, Honeycrisp or Gala Apples, (about 10oz -300g) , cored and sliced
  • 2 cloves garlic , minced
  • 3 tbsp  (45g) honey
  • 1/2 cup (120ml) chicken or vegetable stock
  • 2 tbsp  (30g) butter
  • fresh thyme or rosemary , for garnishing
  • 1 tbsp (15ml) apple cider vinegar

Instructions

  • Cut the chicken breast into ¾ inch (2cm) long strips. Season the chicken breasts with salt, pepper, and a pinch of dried thyme and rosemary.
  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  • Add the chicken to the pan and cook for about 4-6 minutes. Flip the chicken and cook for another 4-6 minutes until golden brown. Check if the chicken is cooked through.
  • Transfer the chicken to a plate until you prepare the garlic honey sauce.
  • Add the apple slices into the pan. If necessary add another tablespoon of olive oil. Cook the apples for about 3-5 minutes per side until soft.
  • Add garlic, chicken or vegetable stock, honey, butter and apple cider vinegar.
  • Cook for about 1 minute until simmers, butter is melted and garlic is fragrant.
  • Transfer the chicken back into the skillet, and toss to coat with the garlic honey sauce.
  • Remove from heat, sprinkle fresh rosemary or thyme.
  • Serve with mashed potatoes, rice, or crusty bread.

Every time we visit Greece, we enjoy serving this salad at their local tavernas near the sea.

Start with ripe tomatoes, sliced into juicy wedges. Combine them with crisp cucumber slices, green pepper slices and thinly sliced red onions that are offering a satisfying crunch. Add Kalamata olives to provide a briny contrast. Top with creamy block of feta cheese that is rich and slightly tangy. Sprinkle the salad with dried oregano for a touch of earthy aroma.

Drizzle extra virgin olive oil generously over the salad. Season lightly with sea salt and freshly ground black pepper, letting the natural flavors shine.

  • 1 pound  (450g) tomatoes , about 3-4 tomatoes
  • 1 medium red onion (about 2.5 oz – 80g)
  • 7 oz (200g) cucumber
  • 4 oz (120g) green pepper , about 1 medium pepper
  • 1/3 cup (70g) black olives
  • 7 oz (200g) block feta cheese
  • 1 tbsp (15g) red wine vinegar
  • 1/4 cup (60g) extra virgin olive oil
  • 1 tsp dried oregano
  • salt and freshly ground black pepper

Instructions

  • Cut the tomatoes into wedges.
  • Cut the cucumber into thick moon slices.
