These Pumpkin Oatmeal Cookies are everything I love about fall baking: cozy, soft, and full of real pumpkin flavor. They’re full of warm spices and chewy oats that make them taste like pure comfort.

I wanted a cookie that tasted like a treat but didn’t leave me with that sugar overload, so I used less butter and sugar than most recipes and let the pumpkin do the heavy lifting. Its natural sweetness and moisture make the cookies soft for days, even without heaps of fat. I like to use homemade roasted pumpkin that I usually do in advance. 

I also added plenty of oats, not just for texture, but for that delightful toasty flavor they bring when baked. The brown sugar gives them just enough caramel richness and the honey helps the cookies stay softer and moister for longerThese cookies take a lighter, healthier twist on the classic, lower in calories, but full of cozy flavor.

I like to toss in some nuts or chocolate for a bit of contrast, but they’re wonderful even plain, with a cup of tea on a chilly afternoon.

They taste wonderful and are the kind of cookie you don’t mind sneaking for breakfast or sharing with your kids after school.

How to make Pumpkin Oatmeal Cookies

Begin with preheating the oven to 350°F (180°C) and lining a baking sheet with parchment paper. Set aside.

Next, prepare the dry ingredients. In a medium bowl, whisk together the oats, flour, spices, baking soda, and salt until evenly combined.

Then, mix the wet ingredients. In a separate large bowl, beat together the softened butter, sugar, honey, and vanilla extract until creamy and smooth. Add the egg and mix until incorporated, followed by the pumpkin purée. Mix until the mixture is uniform and silky.

Now, combine the mixtures. Gradually add the dry ingredients to the wet mixture, stirring just until everything is blended. If desired, fold in chopped nuts, chocolate chips, or any other add-ins of your choice for extra texture and flavor.

Next, shape the cookies. Using an ice cream scoop or spoon, portion the dough into equal mounds and place them onto the prepared baking sheet, spacing them about 1 inch (2.5 cm) apart.

Flatten each cookie slightly as they won’t spread much during baking.

Bake for 10–12 minutes, or until the cookies are lightly golden at the edges but still soft in the center.

Allow the cookies to cool on the baking sheet for about 5 minutes, then transfer them to a wire rack to finish cooling. They’ll firm up slightly as they cool but remain soft, chewy, and full of cozy pumpkin flavor.

Apple Cream Cheese Buns

How to make apple cream cheese buns

Begin with preparing the dough. In a large bowl, combine the yeast, 1 teaspoon (5 g) of sugar, and ¼ cup (60 ml) of lukewarm milk. Stir lightly and let it sit for 5 minutes until the yeast activates and becomes foamy.

Once the yeast is ready, add the remaining ingredients — flour, sugar, salt, the rest of the milk, egg, vanilla extract, and softened butter. Knead the dough for 5–7 minutes, either by hand or with a stand mixer fitted with a dough hook, until it becomes smooth, elastic, and pulls away from the sides of the bowl.

Transfer the dough to a lightly oiled bowl, cover it with plastic wrap, and let it rise for about 1 hour in a warm space, or until doubled in size.

Meanwhile, prepare the apple filling

Peel and dice the apples, then place them in a small saucepan or skillet. Add lemon juice, cinnamon, sugar, and water, and cook over medium-low heat for about 15 minutes, stirring occasionally, until the apples are tender. Stir in cornstarch and cook for another minute or two until the mixture thickens slightly. Remove from the heat and let cool completely.

Prepare the buns

Once the dough has doubled, transfer it to a lightly floured surface and divide it into 12 equal pieces. Shape each portion into a smooth bun and arrange them on a parchment-lined baking sheet. Cover with a clean kitchen towel and let them rest for 15–20 minutes while the oven preheats to 350°F (180°C).

When the weather cools down, I love baking with apples, and these Apple Oatmeal Cups are one of my favorite healthier treats to make. They’re soft, warmly spiced, and filled with little bites of apple, but what makes them extra good is how wholesome they are. Instead of lots of sugar or butter, I use homemade applesauce and Greek yogurt to keep them moist and naturally sweet. That little swap keeps them tender while also making them lighter and lower in calories than your classic muffin.

I love that these bake up in a muffin tin, so they’re already portioned and ready to grab on busy mornings. My girls like them warm with a little nut butter spread on top, but they’re just as good plain with a cup of tea or coffee. They’re not overly sweet, more of a cozy breakfast or snack that feels good to eat and keeps you full.

These keep well in the fridge, and you can even freeze a batch to have on hand. They’re the kind of recipe that makes the kitchen smell like cinnamon and fall, and somehow they disappear way faster than I expect every single time.

How to make Apple Oatmeal Cups

Begin with preheating your oven to 180°C (350°F) and lining a 12-cup muffin tin with silicone liners (or paper if you prefer). This step ensures the muffins release easily after baking.

In a large mixing bowl, stir together the oats, baking powder, cinnamon, nutmeg, and a pinch of salt until evenly combined.

In a separate bowl, whisk the eggs, applesauce, yogurt, milk, and honey until smooth.

Pour the wet ingredients into the dry mixture and stir gently until just combined. Fold in the diced apple pieces, making sure they’re evenly distributed throughout the batter.

Divide the mixture evenly among the prepared muffin cups, filling each almost to the top. Sprinkle walnuts or pecans for extra crunch. Bake in the preheated oven for 25–28 minutes, or until the muffins are set and lightly golden on top.

Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack. Enjoy warm, or let them cool completely.

What I love most about these cups is how they surprise people. At first, they look like simple chocolate treats, but one bite reveals something much more special. The roasted kataif gives the pistachio cream a light crunch that keeps you coming back for another taste.

They’re perfect for sharing at gatherings, wrapping up as thoughtful little gifts, or keeping tucked away for when you want a sweet moment all to yourself. Simple ingredients, put together with care, can create something truly memorable, and these Dubai Chocolate Cups are proof of that.

How to make Dubai Chocolate Cups

Begin with preparing the pistachio paste. Start by blanching the pistachios: place them in a bowl with boiling water for 5–10 minutes, then drain. Rub off the skins with a kitchen towel until the nuts are bright green, then pat dry. Transfer the pistachios to a food processor and blend until they turn into a thick paste, scraping down the sides occasionally. This may take several minutes.

Next, melt the white chocolate gently over a bain-marie. Then add it, along with the condensed milk, coconut oil, salt, and matcha (if using), straight into the pistachio paste. Blend until you have a silky, luscious pistachio cream. Set aside until ready to use.

Then, prepare the filling base. In a dry nonstick skillet, melt 2 teaspoons (10 g) of butter over medium heat. Add the kataif pastry to the pan and toast, stirring often, until it’s deeply golden and crisp, about 3–5 minutes. The aroma should turn nutty and buttery. As it toasts, crush the strands lightly with your spatula or spoon. Once cooled, crush more finely with your hands if necessary.

How to make the chocolate cups

Melt the milk chocolate gently over a bain-marie, then remove from heat and stir in the semisweet chocolate to temper it. Spoon a teaspoon of melted chocolate into each cup, swirling or using the back of a spoon to coat the bottom and halfway up the sides. Aim for a thick, even shell. Refrigerate for 10 minutes until set.

Next, mix the toasted kataif with the pistachio paste. Spoon this mixture into the prepared chocolate shells, pressing lightly to avoid gaps. Top each with another teaspoon of pistachio paste for a creamy center. Refrigerate for 5–10 minutes to firm slightly.

Then, cover the filling withthe remaining tempered chocolate, making sure the top is sealed and the chocolate connects to the sides of the shell. Refrigerate for 15–20 minutes until fully set.

Finally, store your pistachio chocolate cups in an airtight container in the fridge for up to a week.

For Topping

  • 1/2 cup (120g) pistachio cream , to top the kataif filling

Instructions

Prepare the pistachio paste.

They’re finished with a dusting of cocoa and a hint of instant coffee, so the first taste is slightly bitter, just like the top of a classic tiramisu. Then comes the creamy center, smooth, rich with coffee flavor, and melting away with every bite.

How to make Tiramisu Truffles

Make the truffle mixture. Fold in the crushed ladyfingers until a thick, scoopable dough forms.
Taste and adjust, add more sugar if you prefer sweeter truffles, or more crushed biscuits if the mixture is too soft. Scoop about 1 tablespoon of mixture and roll into balls.

Begin by melting the chocolate over a bain-marie and setting it aside to cool slightly. Preheat the oven to 200°F (100°C) and line a baking sheet with parchment paper.

In a clean bowl, whip the egg whites with salt until foamy. Gradually add the sugar while continuing to whip until firm, glossy peaks form. Mix in the vanilla extract and vinegar to stabilize the meringue.

Secure the parchment paper to the baking sheet by dotting a little meringue in each corner. To shape the nests, place a spoonful of meringue onto the sheet and press gently in the center to create a small dip.

Drizzle a teaspoon of the melted chocolate over the top and swirl with a toothpick. Add another generous spoonful of meringue on top, swirl again with more melted chocolate, and use a toothpick to create a deeper well in the center for the filling.

Repeat the process with the remaining meringue. Bake the nests for 90 minutes, then turn off the oven and leave them inside to cool completely. This may take another 2–3 hours.

The best part? It’s easier to make than you might think! With just a few simple ingredients, cream, eggs, sugar, salt and a touch of vanilla, you can create an amazing treat right in your own kitchen. This Caramel Crème Brûlée is guaranteed to impress. 

How to make salted caramel crème brûlée

Begin with heating the cream over medium heat just until it starts to bubble around the edges. Remove from heat and set aside.

Next, prepare the caramel. In a medium heavy-bottomed saucepan, combine the sugar and water over medium-high heat. Cook without stirring until the sugar dissolves and turns a deep amber color.

Reduce the heat to low, and carefully pour the hot cream into the caramel a little at a time, stirring gently until fully combined. Be cautious, as the mixture will bubble vigorously.

In a medium bowl, whisk the egg yolks with salt and vanilla extract until smooth and creamy. Slowly pour the warm caramel mixture into the egg yolks, stirring constantly to prevent curdling.

For a silky texture, pass the mixture through a fine-mesh sieve into a pitcher.

How to bake crème brûlée

Place four 8-ounce (220g) ramekins in a large baking dish. Divide the caramel custard evenly among the ramekins. Carefully pour hot water into the baking dish, filling it halfway up the sides of the ramekins to create a water bath.

Transfer the dish to the middle rack of the oven and bake in a preheated 300°F (150°C) oven for 30-35 minutes, or until the custard is set but still slightly wobbly in the center.

Remove the ramekins from the water bath and allow them to cool to room temperature. Refrigerate for at least 2 hours, or preferably overnight.

Finally, caramelize the top. Just before serving, sprinkle sugar evenly over each custard. Use a kitchen torch to melt and caramelize the sugar until golden and crisp. Let it sit for 5 minutes to harden before serving.

If you love the rich, creamy decadence of classic crème brûlée, just wait until you try this Salted Caramel Crème Brûlée! This dreamy dessert takes everything we adore about the French classic and infuses it with deep, caramel flavor for an extra layer of indulgence.

Ingredients

  • 6 egg yolks , at room temperature
  • 1/2 cup (100g) sugar
  • 2 tbsp (30g) water
  • 1/4 tsp (1g) salt
  • 1 ½ tsp (7g) vanilla extract
  • 2 cups (500g) whipping cream (35% fat)
  • 4 tbsp (60g) sugar , for the caramel crispy topping

Instructions

  • Preheat the oven to 300F (150C).
  • Place the cream into a saucepan and heat until it just begins to boil at the edges. Set aside.

  • Place the sugar and water in a medium heavy-bottomed saucepan over medium-high heat, and cook without stirring until the sugar dissolves and gets a caramel color.
  • Reduce the heat, and carefully pour the hot cream a little at a time over the caramel. Gently stir until the caramel is well combined with the cream.

  • In a medium bowl, whisk together the egg yolks with salt and vanilla until, creamy.

  • Pour the caramel cream mixture over the egg yolk mixture while stirring continuously.

  • For a silky texture, pass the mixture through a fine-mesh sieve into a pitcher.
  • Place 4 (8oz-220g) ramekins into a larger pan. Pour the caramel mixture evenly into the ramekins.

  • Carefully, pour hot water into the pan until halfway up the sides of the ramekins.
  • Place on the middle rack and bake for about 30 minutes until set and trembling into the center.

  • Remove the ramekins from the hot water and let cool at room temperature. Refrigerate for at least 2 hours or overnight.

  • Before serving spread 1 tbsp (15g) sugar on top of each ramekin. Use a torch to melt the sugar and create a crispy crust.
  • Let it set for about 5 minutes before serving.

These Healthy Banana Oatmeal Cookies are the perfect treat when you want something sweet but still keep it healthy and sugar-free. Made with ripe bananas for natural sweetness, oats for a hearty texture, and walnuts for a bit of nutty goodness, they’re as simple as they are delicious. And for a little extra treat, I’ve added chocolate chips, because everything is better with a touch of chocolate.

Made with no refined sugar and just a handful of simple ingredients, these cookies are quick and easy to whip up. They’re great for breakfast on the go, a mid-day snack, or a healthier dessert. Plus, they’re naturally gluten-free if you use certified gluten-free oats.

Soft, chewy, and packed with flavor, these cookies are proof that a healthier treat can still feel indulgent. Bake a batch and enjoy the best of both worlds!

How to make healthy banana oatmeal cookies

Begin by preheating your oven to 350°F (180°C) and lining a baking sheet with parchment paper.

Next, in a medium bowl, mash the bananas with a fork until they are smooth. Stir in the coconut oil (or peanut butter) and vanilla extract until the mixture is well combined.

Add the ground walnuts, salt, and oats to the bowl, and mix until fully incorporated. If using, fold in the chocolate chips for an extra touch of sweetness.

Using an ice cream scoop, take equal portions of dough and place on the prepared baking sheets, 1 inch (2.5 cm) apart. Slightly flatten the tops to your desired thickness, as the cookies won’t spread much during baking.

Bake in the preheated oven for about 15 minutes, or until the cookies are lightly golden. Let the cookies cool on the baking sheet until the cookies are firm enough to remove. While cookies are still warm add some extra chocolate chips and walnuts on top.

  • 1 cup (100g) oats
  • 3/4 cup (75g) ground walnuts/pecans
  • 1/4 tsp (1g) salt
  • 1 tsp (5g) vanilla extract
  • 3 tbsp (45g) coconut oil or peanut butter
  • 1/2 cup (90g) semisweet chocolate chips , plus extra for topping, optional

Celebrate the season with these simple yet delicious soft chocolate cranberry cookies that bring warmth and joy to every bite.

How to make soft chocolate cranberry cookies

Begin with whisking together the flour, cocoa powder, baking soda, and salt in a medium-sized bowl. Set this dry mixture aside.

Next, in a large bowl, cream the butter and sugar until the mixture is light, creamy, and fluffy. Add the egg and vanilla extract, and mix well to combine.

Gradually incorporate the dry ingredients into the butter mixture until fully mixed. Fold in the semisweet chocolate chips or chunks and dried cranberries. Cover the bowl with plastic wrap and refrigerate the dough for at least 1 hour.

How to bake the cookies

Preheat your oven to 350°F (180°C) and line baking sheets with parchment paper.

Scoop the dough using an ice cream scoop to create even portions, about 1-inch (2.5 cm) balls. Place them on the prepared baking sheets, leaving 2 inches (5 cm) of space between each cookie. Slightly flatten the dough balls.

Bake the cookies for 10–12 minutes, just until the edges are set. Remove from the oven and let the cookies cool on the baking sheets for 5 minutes.

While still warm, press additional chocolate chips or chunks onto the tops of the cookies for a decorative and extra chocolaty finish.
