It’s also one of my favorite ways to use up leftover roasted pumpkin. Thin slices of red onion add a gentle bite that balances the flavors. A handful of toasted nuts brings crunch, dried cranberries add little pops of tartness, and a crumble of feta ties it all together with a creamy, salty touch.

I love this simple flavorful dressing, that I use for most of my salads. It is made with apple cider vinegar, a bit of honey or maple syrup, Dijon mustard, olive oil, and a small clove of garlic for warmth and depth. It blends everything without taking over.

This salad is colorful and full of contrast, red, orange, and green on one plate. It is perfect for a family dinner, a lunch with friends, or as a side at a fall gathering.

How to make Apple Pumpkin Fall Salad

Begin with preparing the dressing. In a small bowl, whisk together the apple cider vinegar, honey or maple syrup, Dijon mustard, olive oil, minced garlic, salt, and pepper. Whisk until fully emulsified and smooth. Set aside.

Next, assemble the salad. In a large bowl, combine sliced apples, roasted pumpkin cubes, toasted nuts, dried cranberries, red onion, feta cheese, and mixed greens.

It’s the kind of cake that’s comforting and a little rustic, yet elegant enough to share at holiday gatherings. Every time I make it, I’m reminded how much cranberries bring desserts to life with their vibrant, tangy flavor. This cake feels like a little homemade celebration in every slice, and I love sharing it with family and friends.

How to make Vanilla Cranberry Vertical Layer Cake

Begin with preparing the vanilla sponge cake. Preheat the oven to 350°F (180°C). Grease and line a 12×16 inch (30×40 cm) baking sheet with parchment paper, then set aside.

Separate the egg whites from the yolks. In a medium bowl, whisk the yolks with ¼ cup (50 g) sugar and vanilla extract until pale and creamy. Add the flour and baking powder, and gently mix until smooth.

Add a pinch of salt to the egg whites. Beat until foamy, then gradually add the remaining ¼ cup (50 g) sugar, continuing to whip until stiff peaks form. Carefully and gradually fold the whipped egg whites into the yolk mixture, keeping as much air in the batter as possible.

Pour the batter into the prepared baking sheet, spreading it evenly to the edges. Bake for 10–12 minutes, or until a toothpick inserted in the center comes out clean. Set aside to cool completely.

Prepare the cranberry sauce. In a small saucepan, combine cranberries, sugar, and lemon juice. Bring to a boil over medium heat, stirring constantly, then reduce the heat and simmer for 10-15 minutes until the mixture thickens slightly.
Press the sauce through a sieve to remove skins and seeds, then let it cool completely before using.

Prepare the sugar syrup. In a small saucepan, combine water and sugar. Bring to a boil and cook for 3 minutes.
Remove from the heat, stir in vanilla extract, and allow to cool.

Prepare the cream cheese frosting. In a large mixing bowl, beat the cream cheese with powdered sugar and vanilla extract until smooth and creamy. Pour in the whipping cream and continue beating until the mixture forms stiff peaks.

How to assemble the cake

Gently invert the sponge cake onto a clean baking sheet and remove the parchment paper. Brush the surface with the vanilla syrup.

Spread the cranberry sauce evenly over the cake, then place it in the freezer for 20 minutes to firm up slightly.

Next, spread the cream cheese frosting evenly over the cranberry layer. Freeze again for another 20 minutes to make rolling easier.

Once chilled, trim the edges for neat sides, then cut the cake into 6 long strips, each about 2 inches (5 cm) wide.

Roll up the first strip and stand it upright on a serving plate. Wrap the next strip around it to form a spiral, continuing with the remaining strips until the entire cake is assembled.

Use a knife to smooth the top and reveal the layers. Refrigerate for about 2 hours or overnight to allow the cake to set.

Finally, pipe whipped cream decoratively on top and garnish with sugar-coated cranberries or red currants.

How to make chocolate cranberry mousse cake

Begin by preparing the cocoa brownie base. Preheat your oven to 320°F (160°C). Grease and line an 8-inch (20 cm) springform pan with parchment paper to ensure easy release later.

In a medium bowl, whisk together the egg and sugar until well combined and slightly pale. Add in the oil and vanilla extract, whisking until smooth and glossy.

Sift in the flour, salt, and cocoa powder, then gently whisk again until the batter is fully incorporated and no dry streaks remain.

Pour the brownie batter into the prepared pan, spreading it evenly with a spatula. Bake for 20–25 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs attached.

Allow the brownie to cool completely in the pan while you prepare the next layers.

Begin by preheating your oven to 200°C (400°F). Line a baking sheet with parchment paper and lightly oil it to prevent sticking and ensure even crisping.

Next, prepare the chicken. Cut each breast in half lengthwise to create 6 thinner cutlets that will cook quickly and evenly.

Then, set up the coating stations. In a shallow bowl, mix together the panko breadcrumbs, grated cheddar, garlic powder, paprika, salt, and black pepper. Place flour on a small plate, and beat the eggs in another bowl.

Coat the chicken by dredging each cutlet lightly in flour, dipping it into the beaten eggs, and pressing it firmly into the panko–cheddar mixture. Make sure each piece is fully covered for maximum crunch.

Arrange the breaded chicken on the prepared baking sheet, leaving a little space between pieces. Drizzle or spray lightly with olive oil to help them bake to a golden crisp.

Bake for 18–22 minutes, flipping halfway through if you like, until the coating is golden and the chicken is cooked through (internal temperature should reach 74°C/165°F). For an extra-crispy finish, switch on the broiler for the last 1–2 minutes.

Meanwhile, prepare the honey–mustard yogurt dip. In a small bowl, whisk together all the ingredients until smooth and creamy. Taste and adjust to your liking, add more honey for sweetness or extra mustard for tang.

Unlike the traditional multi-layered Black Forest cake, the cake roll is lighter, quicker to prepare, and easier to slice and serve, perfect for special occasions or holiday tables.

While the original Black Forest cake often contains kirsch (cherry liqueur), this roll can be made with or without it, depending on your preference. The result is a decadent yet balanced dessert that delivers all the nostalgic flavors of the classic in a more modern, elegant form.

Begin with preparing the chocolate sponge cake. Next, prepare the sour cherry sauce. Continue with cream cheese filling and then assemble the cake roll.

How to prepare the chocolate sponge cake

Preheat the oven to 350°F (180°C). Grease a 12×16 inch (30×40 cm) baking sheet and line it with parchment paper for easy release. In a medium bowl, sift and whisk together the flour, cocoa powder, baking powder, and salt. Set this dry mixture aside.

In a large bowl, beat the eggs, sugar, and vanilla using an electric mixer until the mixture becomes pale, foamy, and lemon-colored. Add the oil and mix until fully combined. Gradually fold in the flour mixture, being careful not to deflate the batter.

Pour the batter into the prepared pan and bake for 8–10 minutes, or until a toothpick inserted in the center comes out clean. Sear the chicken for 6–8 minutes on each side, depending on thickness, until golden brown and cooked through to 165°F (75°C). Remove the chicken from the skillet and set it aside.

Next, sauté the garlic and cherry tomatoes. Reduce the heat to medium. In the same skillet, add the minced garlic and sauté for about 30 seconds, just until fragrant. Add the cherry tomatoes and cook for 3–4 minutes, until they soften and begin to blister.

Pour in the chicken broth and stir to deglaze the pan, scraping up any browned bits. Let it simmer for 1–2 minutes. Stir in the cooking cream and Parmesan cheese, and simmer gently for another 2–3 minutes, until the sauce begins to thicken slightly.

Golden, crispy on the outside and irresistibly creamy inside, these Baked Arancini are my take on a classic Italian favorite, made just a bit lighter, but just as comforting. Instead of deep frying, these are baked until beautifully golden, which means less mess and a little more balance without giving up that satisfying crunch.

The base is a simple homemade risotto, stirred slowly until rich and velvety, then cooled and shaped around a hidden pocket of gooey mozzarella. I stir in sweet green peas right at the end of cooking, just enough to keep their color and a bit of bite. They bring a lovely brightness to the richness of the rice and cheese.

Baking the arancini still gives you that crisp shell, especially if you use panko breadcrumbs and a drizzle of olive oil. We love serving these with warm marinara for dipping, but they’re also great as a snack or appetizer on their own.

They’re a little hands-on, but very forgiving and perfect for making ahead. I often make a batch when we have leftover risotto, and the kids love them in lunchboxes the next day. Comfort food, but clever. Hope you try them!

Baked Arancini with panko breadcrumbs

How to make baked arancini

Begin with making the risotto. In a saucepan, heat olive oil over medium heat and sauté the onion until soft and translucent.

Next, add the rice and toast it for 1–2 minutes, stirring frequently. Pour in the white wine (if using) and cook until it’s mostly absorbed.

Then, start adding the warm chicken or vegetable stock one ladle at a time, stirring continuously and letting each addition absorb before adding the next. Continue this process for about 20 minutes, or until the rice is tender and creamy.

In the final minute, stir in the peas, then remove the pan from heat and mix in the Parmesan cheese, salt, and pepper.

After that, spread the risotto in a baking dish and let it cool completely. For best results, refrigerate for 1–2 hours or overnight if making ahead.

How to shape the arancini

Begin by preheating your oven to 400°F (200°C) and lining a baking sheet with parchment paper.

Take a heaping tablespoon of chilled risotto, flatten it slightly in your palm, and place a small cube of mozzarella in the center. Shape it into a ball, sealing the cheese inside. Repeat with the remaining risotto.

How to bread the arancini

Set up three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs. Roll each risotto ball in flour, dip in egg, then coat with breadcrumbs. Place them on the prepared baking sheet.

Lightly drizzle or brush the arancini with olive oil. Bake for 20–25 minutes, or until golden brown and crispy.

I’ve swapped out refined sugar for honey or maple syrup, making it an indulgent treat without being overly sweet.

This cake is proof that you don’t need refined sugar or gluten to create an amazing dessert. Chocolate Gluten-Free Bundt Cake

How to make chocolate gluten-free bundt cake 

Begin by preheating the oven to 350°F (180°C) and preparing a 9 or 10-inch (23-25 cm) Bundt pan by buttering it and dusting it with oat flour to prevent sticking.

Next, in a medium bowl, whisk together oat flour, cocoa powder, salt, and baking powder. Set this dry mixture aside.

In a separate large bowl, mix honey, butter, and vegetable oil until creamy. Incorporate the eggs one at a time. Stir in the vanilla extract to enhance the flavor.

With the mixer on low, gradually add the dry oat flour mixture, alternating with the buttermilk, until all the ingredients are well incorporated into a smooth batter.

Pour the batter into the prepared pan and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean. If the cake browns too quickly, cover it loosely with aluminum foil and continue baking.

Once baked, allow the cake to cool in the pan for about 10 minutes before inverting it onto a serving platter.

Now, prepare the chocolate ganache by placing chopped chocolate and cream in a heatproof bowl over a pan of simmering water. Stir gently over low heat to melt the chocolate and the ganache is smooth and glossy.

  • 1/2 cup (110g) vegetable oil
  • 1/3 cup + 2 tbsp (150g) honey/maple syrup
  • 4 eggs
  • 1 tsp (5g) vanilla extract
  • 2 cups (200g) oats , processed into fine flour
  • 3/4 cup (90g) dark cocoa powder
  • 2 ½ tsp (10g) baking powder
  • 1 tsp (5g) salt
  • 1 cup (240g) buttermilk

  • 3.5 oz (100g) refined sugar-free chocolate
  • 3.5 oz (100g) whipping cream
