This Apple Pumpkin Fall Salad brings together everything I love about autumn: crisp apples, sweet roasted pumpkin, and a mix of cozy, earthy flavors. It’s also one of my favorite ways to use up leftover roasted pumpkin. Thin slices of red onion add a gentle bite that balances the flavors. A handful of toasted nuts brings crunch, dried cranberries add little pops of tartness, and a crumble of feta ties it all together with a creamy, salty touch.

I love this simple flavorful dressing, that I use for most of my salads. It is made with apple cider vinegar, a bit of honey or maple syrup, Dijon mustard, olive oil, and a small clove of garlic for warmth and depth. It blends everything without taking over.

This salad is colorful and full of contrast, red, orange, and green on one plate. It is perfect for a family dinner, a lunch with friends, or as a side at a fall gathering.

How to make Apple Pumpkin Fall Salad

Begin with preparing the dressing. In a small bowl, whisk together the apple cider vinegar, honey or maple syrup, Dijon mustard, olive oil, minced garlic, salt, and pepper. Whisk until fully emulsified and smooth. Set aside.

Next, assemble the salad. In a large bowl, combine sliced apples, roasted pumpkin cubes, toasted nuts, dried cranberries, red onion, feta cheese, and mixed greens.

How to make this German potato salad

I love this Greek Salad, known as Horiatiki in Greece as it bursts with fresh flavors and vibrant colors. This salad, a staple of Mediterranean cuisine, highlights simplicity and quality ingredients. It’s a perfect appetizer or side dish, but it can also stand alone as a light, refreshing meal. This salad offers a delightful combination of textures and tastes, from the juicy tomatoes to the creamy feta. Every time we visit Greece, we enjoy serving this salad at their local tavernas near the sea.

Start with ripe tomatoes, sliced into juicy wedges. Combine them with crisp cucumber slices, green pepper slices and thinly sliced red onions that are offering a satisfying crunch. Add Kalamata olives to provide a briny contrast. Top with creamy block of feta cheese that is rich and slightly tangy. Sprinkle the salad with dried oregano for a touch of earthy aroma.

Drizzle extra virgin olive oil generously over the salad. Season lightly with sea salt and freshly ground black pepper, letting the natural flavors shine.

How to make Greek salad

Season the salad with salt, pepper and a sprinkle of oregano. Drizzle extra virgin olive oil and red wine vinegar over the vegetables, then toss everything together until well coated.

I love this Greek Salad, known as Horiatiki in Greece as it bursts with fresh flavors and vibrant colors. This salad, a staple of Mediterranean cuisine, highlights simplicity and quality ingredients. It's a perfect appetizer or side dish, but it can also stand alone as a light, refreshing meal.

Ingredients

  • 1 pound  (450g) tomatoes , about 3-4 tomatoes
  • 1 medium red onion (about 2.5 oz – 80g)
  • 7 oz (200g) cucumber
  • 4 oz (120g) green pepper , about 1 medium pepper
  • 1/3 cup (70g) black olives
  • 7 oz (200g) block feta cheese
  • 1 tbsp (15g) red wine vinegar
  • 1/4 cup (60g) extra virgin olive oil
  • 1 tsp dried oregano
  • salt and freshly ground black pepper

Instructions

  • Cut the tomatoes into wedges.
  • Cut the cucumber into thick moon slices.

How to make strawberry pasta salad

In a large mixing bowl, combine the cooled pasta, quartered strawberries, crumbled feta cheese, red onion slices, chopped toasted walnuts, cherry tomatoes, cucumber, baby spinach and arugula leaves.   • 9 oz (250g) pasta , rotini, fusilli, or penne
  • 7 oz (200g) fresh strawberries , cut into quarters
  • 3.5 oz (100g) crumbled Feta cheese
  • 3.5 oz (100g) cucumber , cut into slices
  • 3.5 oz (100g) cherry tomatoes , cut in half
  • 1 oz (30g) red onion , cut into slices
  • 1/2 cup (50g) toasted walnuts , chopped
  • 1 cup (20g) baby spinach leaves

For the Dressing

  • 3 tbsp (45g) olive oil
  • 2 tbsp (30g) balsamic vinegar
  • 1 tbsp (20g) honey
  • 1 tsp (5g) Dijon mustard

  • Preheat a small skillet over medium-high heat. Add walnuts and toast stirring constantly.
