This Apple Pumpkin Fall Salad brings together everything I love about autumn: crisp apples, sweet roasted pumpkin, and a mix of cozy, earthy flavors. It’s also one of my favorite ways to use up leftover roasted pumpkin. Thin slices of red onion add a gentle bite that balances the flavors. A handful of toasted nuts brings crunch, dried cranberries add little pops of tartness, and a crumble of feta ties it all together with a creamy, salty touch.

I love this simple flavorful dressing, that I use for most of my salads. It is made with apple cider vinegar, a bit of honey or maple syrup, Dijon mustard, olive oil, and a small clove of garlic for warmth and depth. It blends everything without taking over.

This salad is colorful and full of contrast, red, orange, and green on one plate. It is perfect for a family dinner, a lunch with friends, or as a side at a fall gathering.

How to make Apple Pumpkin Fall Salad

Begin with preparing the dressing. In a small bowl, whisk together the apple cider vinegar, honey or maple syrup, Dijon mustard, olive oil, minced garlic, salt, and pepper. Whisk until fully emulsified and smooth. Set aside.

Next, assemble the salad. In a large bowl, combine sliced apples, roasted pumpkin cubes, toasted nuts, dried cranberries, red onion, feta cheese, and mixed greens.

Drizzle the prepared dressing over the salad ingredients and toss gently to coat everything evenly, ensuring each bite is flavorful.

I love that they come together quickly, in one bowl. You can top them with a few dark chocolate pieces before baking for a little extra richness. 

They’re naturally gluten-free, refined sugar-free, dairy-free and full of flavor. I’ve already made them several times this fall, and they’ve quickly become one of my favorite treats, perfect with a cup of coffee or to share with someone you love.

How to make flourless pumpkin brownies

Begin with preheating the oven to 350°F (180°C). Line an 8×8-inch (20×20 cm) baking pan with parchment paper, leaving some overhang for easy removal.

Next, prepare the batter. In a large bowl, whisk together the eggs, honey or maple syrup, and vanilla extract until well blended. Add the melted coconut oil and whisk again until fully incorporated.

Stir in the pumpkin purée and mix until smooth and uniform. Sift in the cocoa powder, instant coffee or pumpkin spice if used and salt, and stir just until the mixture is fully combined and glossy.

Pour the batter into the prepared pan and spread it evenly. If you like, sprinkle chocolate chips or chunks over the top for extra richness.

Bake for 25–30 minutes, or until the top looks set but the center remains soft, this will give the brownies their signature fudgy texture.

Finally, cool completely in the pan before slicing. The brownies will firm up and become even more dense and chocolatey as they chill.

There’s something about this Pumpkin Oatmeal Bread that feels so comforting. It’s soft, moist, and full of real pumpkin flavor. I usually sprinkle a handful of walnuts on top before baking, they give the perfect little crunch.

What I adore most is how easy it is to prepare. It’s the sort of cake you can enjoy any time of day: with your first cup of coffee, as an afternoon pick-me-up, or even as a cozy dessert with a dollop of yogurt.

Every bite tastes like fall, comforting, nourishing, and a little nostalgic. It’s not fancy, just real, good homemade cake. 

How to make healthy pumpkin oatmeal bread

Begin with preheating your oven to 350°F (180°C). Lightly grease a 9×5-inch (23×13 cm) loaf pan and line it with parchment paper for easy removal.

In a medium bowl, whisk together the oat flour, all-purpose flour, salt, baking powder, baking soda, cinnamon, nutmeg, and ginger until evenly combined. Set aside.

In a large mixing bowl, using a whisk or hand mixer, cream the eggs with the honey (or maple syrup), melted butter, and oil until smooth and slightly thickened. Add the buttermilk and vanilla extract, mixing until fully incorporated.

Next, whisk in the pumpkin purée until the mixture is well combined.

Gently fold in the dry flour mixture, being careful not to overmix. The batter should be smooth and slightly thick.

Pour the pumpkin batter into the prepared loaf pan and smooth the top. Sprinkle generously with chopped walnuts for a crunchy finish.

Bake for 60–70 minutes, or until the loaf is golden brown and a toothpick inserted in the center comes out clean. If it begins to brown too quickly, cover it loosely with aluminum foil and continue baking until done.

Allow the pumpkin bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.

This Pumpkin Swirl Cheesecake is the ultimate fall dessert, perfect for Thanksgiving, cozy gatherings, or anytime you want to impress your guests with a beautiful, decadent treat. It’s rich, irresistibly creamy, and packed with the comforting flavors of pumpkin spice.

It starts with a buttery cookie crust that adds the perfect crunch. The filling combines creamy cheesecake and spiced pumpkin, flavored with cinnamon, nutmeg, cloves, and ginger. The pumpkin swirl gives it a beautiful marbled look, making it as tasty as it is stunning.

Serve it as is or with with a dollop of whipped cream, a drizzle of salted caramel sauce, or a sprinkle of toasted pecans, but it’s just as amazing on its own.

How to make pumpkin swirl cheesecake

Begin with preparing the crust, continue with the cream cheese filling, assembling the cheesecake, bake and chill.  

Prepare the crust

Start by preheating your oven to 350°F (180°C). Line an 8-inch (20cm) springform pan with parchment paper for easy removal after baking.

Place the crackers or digestive biscuits into a food processor and pulse until they form fine crumbs. Add sugar, cinnamon, and melted butter, mixing until everything is evenly moistened. This will create your crust base.

Press the crumb mixture evenly into the bottom and up the sides of the springform pan using the back of a spoon. Bake the crust for 10-13 minutes, or until lightly golden. Let it cool completely before adding the filling.

Pumpkin Cheesecake

Prepare the cream cheese filling

Once the crust has cooled, reduce the oven temperature to 300°F (150°C). In a large bowl, beat the cream cheese until smooth. Add brown sugar, salt, vanilla extract, and cornstarch, mixing until well combined. Add the sour cream, then beat again until smooth.

Next, add the eggs one at a time, mixing gently after each addition to avoid incorporating too much air into the batter. This helps ensure a smooth, dense cheesecake.

Transfer a bit less than half of the cream cheese mixture to another bowl. Stir in the pumpkin puree, cinnamon, cloves, ginger, and nutmeg to create the spiced pumpkin layer. Mix until well combined.

Assemble the pumpkin swirl cheesecake

Pour the cream cheese mixture over the prepared crust, by alternating spoon large dollops of each cheesecake filling into the pan. Use a knife or skewer to gently swirl the mixtures together for a beautiful marbled effect.

Bake at 300°F (150°C) for 45 minutes, then turn off the oven and leave the cheesecake in the oven for an additional 15-20 minutes to gently finish setting.

Cool and refrigerate

Once done, remove the cheesecake from the oven and run a sharp knife around the inside edge of the pan to loosen it. Let the cheesecake cool completely at room temperature.

Cover the cheesecake and refrigerate it overnight to allow the flavors to fully develop and the texture to set. Enjoy the next day for a delicious, creamy treat!

  • 7 oz (200g) digestive biscuits or graham crackers
  • 2 tbsp (30g) sugar
  • 1/4 tsp (1g) ground cinnamon
  • 1/4 cup (60g) unsalted butter , melted

For the Cream Cheese Filling

  • 23 oz (650g) cream cheese , room temperature
  • 1/2 cup (100g) brown sugar
  • 2 tbsp (16g) cornstarch
  • 1/4 tsp (1g) salt
  • 3/4 cup (180g) sour cream
  • 3 large eggs , room temperature
  • 1 tsp (5g) vanilla extract

For the Pumpkin Cream Cheese Filling

  • 1 cup (240g) pumpkin puree
  • 1 tsp (3g) ground cinnamon
  • 1/2 tsp (2g) ground ginger
  • 1/4 tsp (1g) ground nutmeg
  • 1/4 tsp (1g) ground cloves

Instructions

Prepare the crust.

  • Preheat the oven to 350°F (180°C) and line with parchment paper an 8-inch (20cm) springform pan (with a removable base).
  • Place the crackers or digestive biscuits into the bowl of a food processor and crush until crumbs form.

Prepare the cream cheese filling.

  • Reduce oven temperature to 300°F (150°C).
  • In a large bowl mix the cream cheese until smooth.

  • Return the saucepan over low heat and while stirring cook for 1 minute or two to pull out the moisture from the batter and until it pulls away from the sides of the pan. You will see some of the dough sticks to the bottom of the pan.
  • Transfer the batter to a large bowl and allow to cool slightly. Add the eggs one at a time, carefully incorporating each into the batter using a wooden spoon or even a stand mixer. It will result in a smooth, homogenous batter that still holds its shape.
  • Transfer the batter to a large pastry bag fitted with a large ½ inch (1cm) round tip and pipe the dough into 1- 1 1/2 inch (3-4 cm) circles on a parchment paper-lined baking sheet.
  • Bake for 25-30 minutes until browned and puffed.

Begin with preheating your oven to 375F (190C) and lining a 12-cavity muffin pan with paper liners. In a bowl, mix flour with salt, cinnamon, ginger, nutmeg, cloves, baking powder, and baking soda. Set this mix aside.

In a large bowl, whisk 2 eggs with sugar until well blended. Add oil and mix to combine. Add pumpkin and vanilla extract, mixing well. Stir in the flour mixture until combined; avoid overmixing and set it aside.

Now, let’s prepare the cream cheese filling. Mix cream cheese with sugar, egg yolk, and vanilla extract. Spoon a generous amount of the pumpkin mixture into the muffin cups. Divide the cream cheese mixture evenly and top it with the remaining pumpkin batter.

Moving on to the crumb topping, in a medium bowl, combine sugar with flour, cinnamon, and melted butter. Divide the crumbs on top of each muffin.

Bake for about 20-25 minutes until golden brown and a toothpick inserted into the center comes out clean. Once done, cool the muffins on a wire rack.

For pumpkin puree, I always like to use fresh roasted pumpkin. I never use canned pumpkin. I usually roast a whole pumpkin in advance and save some for later. Cut the pumpkin into thick slices and place on a parchment paper-lined baking sheet. Bake at 350F (180C) for about 45 minutes to 1 hour or until tender. Let it cool down. Scoop out the pulp and puree in a food processor until smooth. Refrigerate the puree or freeze it for later use.

How to make Chocolate Pots de Crème

Preheat your oven to 320°F (160°C). Begin by placing the semisweet chocolate in a heatproof bowl, setting it aside for later.

 In a saucepan, combine the milk and whipping cream over medium heat until it begins to simmer. Pour this hot mixture over the chocolate. Wait for a minute, then stir until the chocolate is completely melted and well mixed.

In a separate bowl, whisk together the egg yolks, sugar, salt, vanilla extract, and, if desired, instant coffee powder. Gradually pour the melted chocolate mixture into the egg yolk mixture, stirring continuously. Sieve the combined mixture for a smooth texture.

Arrange six ramekins in a baking pan, 5 fl. oz (150ml) capacity each. Divide the chocolate mixture evenly among the ramekins. Pour hot water into the baking pan until it reaches halfway up the sides of the ramekins. Bake for 30 minutes.

Ingredients

  • 1 cup (240g) whipping cream
  • 3/4 cup (180ml) milk
  • 6 oz (180g) semisweet chocolate , small pieces
  • 4 egg yolks
  • 1 tbsp (15g) sugar
  • 1/4 tsp (1g) salt
  • 1/2 tsp  instant coffee powder , optional
  • 1 tsp (5g) vanilla extract

Instructions

  • Preheat your oven to 320°F (160°C). Place 6 ramekins (5 fl. oz – 150ml) capacity each into a baking pan.
  • Place the chocolate in a heatproof bowl and set aside.
  • In a saucepan add the milk and whipping cream and place over medium heat. Bring to a simmer and pour the hot mixture over the chocolate.
  • Let it for a minute and stir until the chocolate is melted and well combined.
  • In a separate bowl, whisk together the egg yolks, sugar, salt, vanilla extract, and instant coffee powder if used.
  • Gradually pour the chocolate mixture into the egg yolk mixture while stirring continuously.
  • Sieve the mixture for a smooth texture.
  • Divide the chocolate mixture evenly into the ramekins.
  • Pour hot water into the baking pan until halfway up the sides of the ramekins.
  • Bake for 30 minutes.
  • Let the pots de crème to cool and refrigerate them for at least 4 hours or overnight.
  • Before serving decorate as desired or serve as is. Enjoy!

This Puff Pastry Caramel Slice is a true masterpiece, blending buttery pastry, rich caramel, and nutty crunch in every bite. 

How to make Puff Pastry Caramel Slice 

To make this dessert start by baking the puff pastry, then continue with the caramel pastry cream. When the pastry cream cools, continue with the caramel pastry cream filling and then assemble the cake. Next, you can prepare the candied pecans. It is totally optional but they bring an amazing texture and flavor. I highly recommend serving the cake with a drizzle of salted caramel sauce. While the cake sets you can prepare the salted caramel sauce.

How to prepare the puff pastry layers.

Preheat the oven to 400F (200C) and line a baking sheet with parchment paper. Roll out the puff pastry thinly and transfer it to the prepared baking sheet. Bake for approximately 15-18 minutes or until it turns a beautiful golden hue. Allow it to cool completely.

How to prepare the caramel pastry cream.

In a medium saucepan, warm the milk until it simmers. While the milk is heating, whisk together the egg yolks with 1 tablespoon of sugar and a pinch of salt until thoroughly blended. Add the flour and cornstarch and mix until smooth. Remove the milk from heat. 

In a separate saucepan, combine ½ cup (100g) sugar and 1 tablespoon of water. Heat it over medium-high heat until the sugar dissolves and transforms into a caramel color. Reduce the heat to low and gradually pour in the hot milk, stirring until the caramel is fully dissolved.

Slowly combine the caramel milk with the egg mixture, then return it to the heat. Cook, stirring constantly, until it boils and thickens. Remove from heat and stir in the vanilla extract. Transfer the cream to a clean bowl, covering it with plastic wrap pressed directly onto the surface to prevent a skin from forming. Let it cool to room temperature.

How to prepare the caramel filling.

Dissolve the gelatin in cold water and let it soak for 5-10 minutes. Melt the gelatin over low heat, then pour it over the caramel pastry cream, mixing until well combined. In a separate bowl, whip the cream until stiff peaks form. Gently fold it into the pastry cream mixture.

Assemble the cake.

Cut an 8-inch (20cm) square from the baked puff pastry. Place it on a serving platter and encircle it with a square cake ring, lining the inside with acetate sheets. Spread the caramel filling evenly over the puff pastry, then break the remaining pastry into crumbs and scatter them on top.

Refrigerate for at least 4-6 hours, or overnight, to set.

How to prepare the candied pecans.

To make the candied pecans, melt butter and sugar in a saucepan over medium heat. Add the pecans and stir until lightly browned and aromatic. Allow them to cool, then chop.

Just before serving, decorate the cake with the chopped candied pecans. Finish with a gentle dusting of powdered sugar. Cut into slices and serve with a drizzle of salted caramel sauce.

Caramel Pastry Cream

  • 2 cups (480ml) milk
  • 3 egg yolks
  • 1 tbsp (15g) sugar
  • 1/2 tsp (3g) salt
  • 1 tbsp (10g) flour
  • 1/4 cup (30g) cornstarch
  • 1/2 cup (100g) sugar
  • 1 tbsp (15ml) water
  • 1 tsp (5g) vanilla extract

For the Caramel Filling

  • 1 ⅓ cup (320g) whipping cream
  • 2 ½ tsp (8g) gelatin powder
  • 3 tbsp (45ml) cold water

Candied Pecans

For Decoration

Instructions

Prepare the puff pastry.

  • Preheat the oven to 400F (200C).
  • Roll the puff pastry thin and transfer to a baking sheet lined with parchment paper.

Prepare the caramel pastry cream.

  • Place the hazelnuts for the crust into the bowl of a food processor. Process until ground.
  • Add Oreo cookies and continue to process until crumbs form. Add melted butter and salt and process until evenly moistened.
  • Press the mixture with the back of the spoon and your fingers where necessary, into the bottom and edges of the pan. Refrigerate until you prepare the filling.
